Tikka marinate recipe by Keenan Blake

1/3 cup oil
2 cinnamon sticks
2 bay leafs
4 cloves
4 cardamon
2 star aniseed
1 tablespoon cumin seeds
15 green chillies, sliced long ways
1/2 chopped coriander
1 stem curry leaf
2/3 cup vinger
150g tikka masala (buy it from gorimas, its the best)
1 tablespoon masala
1/2 tablespoon turmeric
1 tablespoon garam masala
500ml yoghurt
In a pot add the oil, cinnamon stick, bay leaf, cloves, star aniseed, cumin, cardamon, green chillies, curry leaf and coriander. Fry on low heat for 10 mins. Add the tikka masala and fry it for 8 mins. Add the vinger and cook further for 7 mins, which cooks out the vinger. Add the masala, turmeric and garam masala. Add the yogurt and cook for 6 mins. (you can use this marinate for anything from mutton,lamb,beef,pork , chicken,fish and veg)
