Ingredients (Nachos)
250g corn chips (we prefer Doritos sweet chilli pepper party bag)
1 onion
1 can of red kidney beans in brine
100g of cheese (preferably gouda)
1 can of braai relish
1 tablespoon of oil
¼ teaspoon salt
1 teaspoon crushed ginger and garlic
1 teaspoon extra special chilli powder
Ingredients (Guacamole)
2 ripe avocados
¼ teaspoon salt
2 teaspoons lemon juice
½ teaspoon fine black pepper
Method (Nachos)
Grate cheese
Finely chop onion
Heat oil in a small saucepan on a medium heat
Place chopped onions to saucepan
Add salt, ginger and garlic, and chilli powder to saucepan
Mix onions with spices
Add kidney beans and stir well
Cook for 5 minutes or until beans are soft
Mash beans to desired consistency (we prefer it chunky)
Layer the base of a microwavable dish with corn chips
Add mashed beans on top of the layer of corn chips
Add another layer of corn chips on top of the beans
Add braai relish on top of the corn chips
Add last layer of corn chips on top of braai relish
Add grated cheese on last layer of corn chips
Place in microwave (1200w) for 2 minutes or until cheese is melted
Method (Guacamole)
Cut up avocados and place in cup
Add salt, black pepper and lemon juice
Blend all ingredients until smooth
Enjoy this dish as a delicious snack or as a side at a lockdown family picnic with a bottle of Coca-Cola Zero.
