Durban Mutton Curry recipe by Keenan Blake

1.5kg to 2kg mutton, cut into pieces
2 onions, chopped
3 tomatoes, chopped
2 tablespoons ginger and garlic
2 cinnamon sticks
4 cardamon pods
2 bay leafs
4 cloves
2 star aniseed
2 tablespoons cumin
2 stem curry leaf
10 green chillies, sliced long ways 2 curry spoonfuls masala ( about 10 tablespoons)
1/2 curry spoonful turmeric (about 4 tablespoons)
1 curry spoonful garam masala (about 5 tablespoons)
Salt to taste
3 cups water (or more if needed)
1/2 cup oil
5 to 6 potatoes, sliced in half
Coriander for garnishing
Heat oil and add all whole spices, green chillies and curry leaf . Cook until the spices start to fry, then add ginger and garlic, onions and tomatoes. Cook until tomatoes start to break down, then add powdered spices and cook for 5 mins. Add the mutton and salt to taste, plus water and cook until the meat is almost tender for 2 hours. Now add the potatoes and cook the till potatoes are soft. Garnish with coriander.
