Ginger and Mint Mocktail

Mom, wife, ex-corporate-turned-food-stylist, lecturer, and content creator, Ibtesam has shared her favourite zesty mocktail for Ocsober.
Ingredients
· 6 cups water
· 3 Citrus and Ginger Green Rooibos tea bags
· Rind of an orange
· ½ cup brown sugar
· 1 cinnamon stick
· 2 cloves
· 1 star anise
· Ginger ale lemonade (or similar)
· Sea salt
· Rosemary sprig
· Lemon slice
Method
1. Add water, tea bags, sugar, whole spice, and rind to the saucepan and allow to reduce until a thick syrup is left.
2. Once cool, strain and discard the tea bags and spice.
3. Add ice to the glass and pour syrup over.
4. Top with lemonade.
5. Garnish with sliced lemon, cinnamon stick, and rosemary.
6. Sprinkle with salt.
