Rooibos Spice Rub Corn Ribs
Recipe for Rooibos Spice Rub Corn Ribs from Lebo and Tebo Ndala
Ingredients:
- 1 tbsp chilli flakes
- 1 tbsp coriander
- 1 Rooibos teabag (loose leaves)
- 3 tbsp butter
- Zest of 1 lemon
- 3 ears of corn
- Salt & pepper
- 1 spring onion, thinly sliced
- Cream cheese, to serve
- 2 tbsp toasted pine nuts
- Lime wedges, to garnish
Method:
1. Mix butter, chilli, coriander, tea leaves, zest, salt, and pepper.
2. Cut corn into halves, then halves again lengthwise.
3. Brush corn with seasoned butter and cook in an air-fryer (15–20 mins) or oven at 180°C (30–35 mins) until golden.
4. Serve with cream cheese, sprinkle with spring onion and pine nuts, and drizzle lime juice.
